Olive Oil: Taste & Health

We’ve often been puzzled why some recipes specifically call for vegetable oil while others call for olive oil.

Olive oil is simply extracted cold from the olives and has a reputation for being the “healthy oil” since its rich in:

  • Monounsaturated fats (can help reduce bad cholesterol levels in your blood which can lower your risk of heart disease and stroke. They also provide nutrients to help develop and maintain your body’s cells. Oils rich in monounsaturated fats also contribute vitamin E to the diet).
  • Antioxidants (powerful substances, which mostly come from the fresh fruits and vegetables we eat, prohibit (and in some cases even prevent), the oxidation of other molecules in the body. The benefits of antioxidants are very important to good health, because if free radicals are left unchallenged, they can cause a wide range of illnesses and chronic diseases.

Good olive oils also have a pleasant flavour and aroma that compliment many dishes. However, olive oil has a relatively low smoke point (325-375°F/165-190°C), making it less ideal for cooking methods requiring high heat like pan-searing and high-heat stir fries.

Vegetable oil is extracted from seeds like the rapeseed (canola oil) soybean (soybean oil), corn, sunflower, safflower, which requires chemical processes that will allow them to be extracted and so it can have a higher smoke point, better for high-temperature cooking.

These chemical processes are known for being bad for your health. It’s certainly nothing like the simple processes used to make other popular fats/oils, like butter, olive oil or coconut oil.

The mere fact that it is exposed to high heat should turn you away from this oil. It is high in polyunsaturated fats (Omega-3 and omega-6 can help reduce bad cholesterol levels in your blood which can lower your risk of heart disease and stroke), which are very sensitive to high heat and easily become oxidized (rancid).

A toxic solvent called hexane is used to extract the oil from the seeds. Trace amounts of hexane have sometimes been found in cooking oils.

During this highly unnatural manufacturing process, some of the oil becomes damaged. You just can’t tell because the oil is also deodorized, which removes the smell.

One study analysed canola and soybean oils found on store shelves in the U.S. They found that 0.56% to 4.2% of the fatty acids in them were toxic trans fats (raise your bad (LDL) cholesterol levels and lower your good (HDL) cholesterol levels. Eating trans fats increases your risk of developing heart disease and stroke. It’s also associated with a higher risk of developing type 2 diabetes and can mainly be found in processed food, because oils with trans fats can be used many times in commercial fryers).

Till today, only three EU Member States adopted legislation to restrict industrially produced trans fats in the food chain, being Denmark the first one, followed afterwards by Austria and Hungary.

In summary: Even though they are both high in calories, olive oil has more natural ones then vegetable oil. And being healthier, means more price. As a tip to help you save money, you can always use any olive oil that comes in jar with olives, tomatoes, artichokes, etc. as a great salad dressing or storage it in jars for a short period of time.

Scientist, Robert Davis, Ph. D., using the conductor-orchestra concept, explains the relationship that exists among these 200 bio-active components within Aloe Vera. One of these components, a polysaccharide acts as the conductor that leads a symphony composed of 200 active compounds working as the orchestra molecules to work synergistically

Here are the orchestra molecules.

  1. Vitamins: It contains vitamins A (beta-carotene), C, B4 (as choline), B9 (as folic acid), B12 and E, which are antioxidants and neutralize free radicals.
  2. Enzymes: It contains 8 enzymes: aliiase, alkaline phosphatase, amylase, bradykinase, carboxypeptidase, catalase, cellulase, lipase, and peroxidase. Bradykinase specially targets to reduce excessive inflammation.
  3. Minerals: It provides calcium, chromium, copper, selenium, magnesium, manganese, potassium, sodium and zinc. They are essential for the proper functioning of various enzyme in human metabolic systems. They also are antioxidants.
  4. Sugars: It provides monosaccharides (glucose and fructose) and polysaccharides: (glucomannans/polymannose). These are derived from the mucilage layer of the plant and are known as mucopolysaccharides. The most prominent monosaccharide is mannose-6-phosphate, and the most common polysaccharides are called glucomannans. Acemannan, a prominent glucomannan has also been found. Recently, a glycoprotein with antiallergic properties, called alprogen and novel anti-inflammatory compound, C-glucosyl chromone, has been isolated from Aloe Vera gel. They empower our skin and promote healthy glowing complexion.
  5. Anthraquinones: It provides 12 anthraquinones, which are phenolic compounds traditionally known as laxatives. Aloin and emodin act as analgesics, antibacterials and antivirals.
  6. Fatty acids: It provides 4 botanical steroids; cholesterol, campesterol, β-sisosterol and lupeol. All these have anti-inflammatory action and lupeol also possesses antiseptic and analgesic properties.
  7. Others: It provides 20 of the 22 human required amino acids and 8 essential amino acids.  They are Lysine, Valine, Methionine, Leucine, Isoleucine, Phenylaianine, Histidine and Glutamin acid which help the production of elastin, cell regeneration and metabolism.   Also Aloe Vera contains salicylic acid that possesses anti-inflammatory and antibacterial properties.

Production Process

Although Aloe Vera is rich in bio-active components, these active components are easily degraded during the production process, involving crushing, grinding, pressing, filtration and stabilization. Manufacturers have never stopped to advance the production process to assure the active components are perfectly and entirely preserved and maintained. It is only within the last decade, scientists have found the best production process – cold processed.

The best products should be cold processed using the whole leaf. The freshly removed leaves must go directly into production and prevent the extended heat sterilization which damages the active ingredients and reduces its efficacy. Cold processed Aloe Vera therefore has to be sterilized by ultraviolet light and micron filtration.

Various studies found that there are many benefits of using Aloe Vera, including minor sunburns, skin moisturizing, soft scarring, anti-inflammation, fighting aging and supply of nutrients.
